Here is the simple recipe that will help you make this amazing dish with your Instant Pot. Try to follow the timeline mentioned strictly in the recipe for each step to prevent your chicken from being overcooked or undercooked.

- Boneless chicken thighs- one pound
- Shallots- 3 (diced)
- Carrots- 3 (diced)
- Mushrooms- 1 cup (sliced)
- Garlic cloves- 2 medium sized
- White rice- 1.5 cup ( should be rinsed and drained beforehand)
- Chicken broth- 1.5 cups
- Chicken broth- 1/3 cup (for de-glazing pan)
- Chopped Thyme leaves – 2 tablespoons
- Salt- as per taste
- Pepper- as per taste
Step 1: Start with seasoning your chicken thighs generously with salt and pepper properly.
Step 2: Place your instant pot and pre-heat the pot for around 1.5 minutes in the sauté mode. Pour some oil into it and heat. Then add the chicken thighs to the heated oil.
Step 3: As the hot oil sear the chicken thighs, keep it for 5 minutes on either side to get a nice aroma
Step 4: Once the chicken is seared smoothly, remove the chicken thighs on to another dish.
Step 5: Add 1/3 cup of chicken broth into the pot. It will de-glaze the inner side the utensil and will mix in all the flavor inside which is essential.
Step 6: Cook shallot, mushroom, carrots and garlic for around 4 minutes. Add your remaining chicken broth, your drained rice, thyme and stir generously.
Step 7: Add the chicken pieces on top of this mixture. Cover with the pot lid and seal your instant pot.
Step 8: Set the timer for 10 minutes and select the high-pressure option on the control panel of your instant pot. 10 minutes later, let the pressure release naturally at its pace. Avoid the quick release at all cost.
Step 9: Once the pressure is released after 15 minutes, unlock the lid and remove it.
Step 10: Shred the chicken into pieces using 2 forks, while it is still in the pot.
Step 11: Mix well with the rice and stir until all the flavors are released. Your delicious one-pot chicken and rice are ready.
Step 12: One-pot chicken and rice can now be served hot with yogurt or mashed potatoes.
